Focaccia- The Italian Flat Bread

It’s an Italian flat bread with is has a crunchy crust and soft centre. It is usually spiced with dried herbs, loads of olive oil, vegetables of choice and cheese. I love making this bread as it’s a one pan dish excellent as a whole meal served with soup or a thick creamy shake or just eaten as it is.


For the Dough:

  1. All purpose flour 500 grams
  2. Olive oil 1 tbsp
  3. Salt as per taste
  4. Sugar 1 tbsp
  5. Instant Yeast 7 grams
  6. Warm water to knead a soft dough
  7. Dried Garlic Powder 1/2 tsp

For the Topping:

  1. Olive Oil 50 ml + 20 ml
  2. Onion cut lengthwise 3
  3. Spinach chopped handful
  4. Garlic 7 to 8 cloves crushed
  5. Bell pepper 1 cut into squares
  6. Dried Thyme 1/2 tsp
  7. Dried Rosemary 1/2 tsp
  8. Salt as per taste
  9. Chilli flakes as per taste
  10. Pizza Mix Spice 1 tsp


1. Take a cup of warm water and add sugar and yeast to it. Cover and keep aside for 10 mins till frothy.
2. Take the flour and add the rest of the dough ingredients to it, add the yeast mixture. Knead a soft dough with warm water for about 10 mins.
3. Oil a bowl and dough. Cover and let it rise till double in volume in a warm spot.
4. Till then to the 50 ml olive oil add chopped onions and crushed garlic and fry till golden brown. Add the peppers and saute for a minute. Switch off the flame and add the herbs and spinach. Let cool completely.
5. Once it doubles, punch the dough gently spread the dough on a well oiled tray. I spread it thin you can keep it a little thick.
6. With your fingers make wells in the dough and spread the onion mixture and sprinkle the 20 ml olive oil all over the bread.
7. Cover and let rise till double. Almost 2 hours.
8. Bake in a preheated oven at 200 for 20 to 25 minutes.
9. Slice and serve hot.
